Sun Dried Tomato Pasta

This is our feature recipe for the upcoming home and garden show in October. We are so excited to be presenters there. This recipe is perfect for pre-race carb loading as well as for the kids. My 3 year old told me last night, “This is the ‘goodest’ recipe ever!”

Ingredients:
1 lb pasta (bowtie or penne is great) 
¼ cup toasted pine nuts 
2 TBSP oil from sun-dried tomatoes
2 boneless, skinless chicken breasts 
4 garlic cloves, minced 
½ cup sun-dried tomatoes, drained 
½ bunch fresh basil, finely chopped 
½ cup chicken broth 
½ cup (2 oz) crumbled Gorgonzola cheese 

1-2 tsp. sugar

Cook pasta.
 
Toast pine nuts on cookie sheet @ 400 – watch closely to avoid burning.
Heat 1 TBSP olive oil in large pan on medium heat.
Add chicken breasts and sauté each side for 3-6 minutes until done.
Remove chicken from pan – do not clean pan.
Add 1 TBSP olive oil and garlic to the same pan used to cook chicken.
Sauté garlic until cooked (about 1 minute).
Add tomatoes, chopped chicken, basil, broth, cheese, and sugar.
Bring to a boil; reduce heat and simmer for 5 minutes.
Add pasta and pine nuts and toss.
Serve immediately.
