The summer heat tends to suppress my appetite and makes me lose motivation to spend any time in the kitchen slaving over the oven. As a result, meals at my house turn to unhealthy things quickly thrown together in complete desperation. This recipe is one of our family’s favorites.
It’s quick and healthy.
But best of all my kids LOVE it!
Skinny Chicken Salad Sandwiches
3/4 Cup Non-fat Greek Yogurt
3/4 Cup Chopped Celery
1 Cup Chopped Grapes (red or green)
1/2 Cup Cashews
2 Cans (10 oz) Chicken Breast Chunk
Salt and Pepper to Taste
Pour yogurt into a medium-sized mixing bowl. Chop celery and grapes. Add celery, grapes, cashews, and chicken to yogurt. Mix all ingredients together until chicken chunks break down. Lightly season with salt and pepper if desired. Serve salad in a pita or whole wheat roll. Serves 8.
