Savory Honey Grilled Salmon

Savory Honey Grilled Salmon
Lucky for me, I married into a family that owns a cabin in Alaska. So, we enjoy a freezer full of fresh salmon every summer. The boys, and occasionally the girls, love catching the 'reds' off the Kenai river. Thus, salmon becomes a staple at our house so we are always thinking of new ways to cook it! This one is by far my favorite!

Ingredients
  1. 1 pd of Salmon
  2. 1 T. Extra Virgin Olive Oil
Rub
  1. 2 T Fresh minced garlic
  2. 2 t chili powder
  3. 1/2 t onion powder
  4. 1/2 t coriander
  5. 1 t kosher salt
  6. 1/2 t ground pepper
Glaze
  1. 1/2 C Honey
  2. 1T Cider Vinegar
Instructions
  1. Place the salmon on foil then prep. Prior to putting the salmon on the grill, rub with about 1 Tbs of extra virgin olive oil. Then rub the 'rubbing' ingredients all over the top of the salmon. Place the salmon on the grill (on the foil) on medium high and close lid. Let it cook for 18-35 minutes (depending on your grill) You will need to check the salmon regularly. When the salmon is 5 minutes from being finished, poor the glaze over the top and let it glaze. Then pull it off the grill and enjoy!
Notes
  1. When is Salmon finished cooking? Great question! You are looking for the salmon to become flaky looking. So that you can see and peel apart each layer of it. If it appears slimy you need to let it cook longer. However, you'll need to watch it very close as it seems to go from slimy to dry quickly. Cooking times really do vary. My previous salmon I cooked for 18 minutes, while this one took a full 35 minutes on the grill.
