Cinnamon Oat Pancakes

Over at our house we have a hot breakfast 3-4 times per week. My kids absolutely love pancakes, waffles and crepes. We usually make them with Bisquick but when I realized we were all out I whipped up these babies. After eating them, my husband told me there was no need for Bisquick anymore! They are hearty, wholesome, and great for a pre-race breakfast!

Ingredients
  1. 1 1/2 C. Flour
  2. 1 1/2 C. Oats
  3. 3 Tbs. Sugar
  4. 1 Tbs. Baking powder
  5. 1 1/2 tsp. Baking Soda
  6. 1 Tbs. Cinnamon
  7. 1 1/2 tsp. Salt
  8. 2 1/4 C. Buttermilk
  9. 1 Tbs. Vanilla Extract
  10. 2 Tbs. Veg. Oil
  11. 3 Eggs
Instructions
  1. Blend well in a mixer and pour onto a medium high griddle. The mixture may appear runny but they will plumpin up while cooking.
