Carlie’s Cinnamon Crusted Zucchini Bread

I think the reason why zucchini plants were put on the earth was so that people like me could feel like they can grow at least one thing! So, if you are a haphazard gardner like myself, you likely have plenty of zucchini that you need to make something out of.  Luckily I have a sister in law who knows how to make good use of it! I look forward to her bread every summer as it is moist, sweet, and has a melt in your mouth cinnamon crust that adds the perfect touch. Enjoy!


1 C. *oil                                                   
2 C. sugar
3 beaten eggs
3 tsp. vanilla
Sift together and add:
3 C. flour
1 tsp. baking powder
1 tsp. soda
3 tsp. cinnamon
1 tsp. salt
1/2 tsp nutmeg
Add the dry ingredients while alternating between 2 cups of finely grated zucchini (I used a cheese grater with the normal grating side). I did not skin my zucchini to add some extra nutrients. It did not change the texture in the least bit. 
Here is the best part!
After you pour the batter into bread pans, mix up 1 tbs. sugar, 1 tbs. brown sugar, and 1/2 tsp. cinnamon. Then sprinkle it on top of your batter. This will make a sweet crispy crust when you are finished.
Bake at 350 for 1 hour
*Healthy Tip: (I made 2 batches. One made with oil, the other using 1 C. of applesauce. They both tasted great. However, the applesauce recipe does make a more spongy texture if you eat it while it’s hot. By the next morning that spongy texture was gone and I could not tell the difference between the two.
Also, make your zucchini last by grating it up, put it in a ziplock and freeze it to make more bread in the winter!

My little guy kept stealing a piece each time I tried to snap a picture. I guess it passed the one year old taste test!
